1 1/2lbRaw shrimp 20-30 count
2 Egg whites, 1 egg yolk
1tbSalt
1/4cFlour
1/2cCrushed Saltine crackers
  Cooking oil

Butterfly shrimp and wash under cold running water. Combine eggs and salt in a shallow bowl. In another container, combine flour and cracker crumbs. Dip each shrimp in egg mixture, then roll in cracker mixture. Repeat procedure. Heat oil until 365 degrees. Fry shrimp for two to three minutes, until golden brown. Drain on absorbent paper. Nutrition tally per serving: 275 calories; 200 mg cholesterol; 14 g fat; 391 mg sodium.
